I was truly surprised when I went to the local Dollar Tree and found some of the ingredients; the Mixture and powder sugar. I went to the local grocery store and got the chocolate syrup(SN: you can get any syrup you like), chopped nuts, ice cream any flavor although I prefer vanilla when eating funnel cake!

It is very easy to make and very cost effective because you can make up to 5 funnel cakes with one box! So for the price of one at the fair I have and plenty to share with friends!

In the end I can do my happy dance for a fantastic recreated treat for half the cost!

I truly enjoy eating and cooking cornish hens!

I prefer to cook them in my roaster at a low setting to allow all the natural flavors to mingle with each other...lol but if you don't have a roaster you can use your oven.

What I do is preheat the oven on 400 degrees while I'm cleaning the hen or hens.

After, the cleaning rather I use the roaster or the oven I pat my the hen with a paper towel to get rid of some of the excess water.

If I'm using the roaster I don't worry about foil but if I'm using the oven I line my pan with foil but I also pull off extra so that I can cover the hen with the foil after I season it to help keep in the moisture of the hen.

When seasoning my hen it really depends on how I feel

I will use sage, polutry seasoning, peper, Nature's Seasoning, Garlic Powder or Onion Powder!

NOTE: I MAY USE A COMBINATION OF ALL THE SEASONINGS OR I MAY LEAVE SOME OUT IT TRULY DEPENDS WHAT I HAVE A TASTE FOR!

I also cut margarine or butter and place it around the hen to help it get that golden brown color!

I have tried that spray butter but I don't like the taste of the skin when the dish is done so I stick with the real stuff in regards to that!

When you place your hen in the oven turn it down to about 300 to 350 degrees.

After about 30 mins you can base the hen by dipping a spoon or a baser in the juices in the pan and drizzle it back over the hen then place the foil back over the hen.

let it cook for about 30 more mins and repeat the first step but this time keep the foil off of it so that the hen can get brown.

If you have it in the roaster you can base the hen and just let it continue to cook and will get a great golden brown skin.

Let the hen rest for about 5 mins then cut and serve!!!

I am not a chef but I am a home cook these are steps that I use when cooking I am not responsible if something isn't done correctly.

Today would have been my Granny's 93rd Birthday and as I sit back and shed tears of happiness for her life and one of saddness for not being able to pick up the phone and call her when I forget an ingredent that goes in her oh so delicious peach cobbler, collard greens straight from the garden or her homemade biscuits and cakes!

I still honor her because she is the one that helped me cultivate this gift of cooking!!

I think back when I tried to cook my mom some catfish that I tried to make like my Granny's it looked so good and tasted so horrible...lol We ended ordering some take out that night!!

What I like about Granny is she didn't get mad if I made a mistake in the kitchen, she didn't make it seem like a chore when she was teaching me!!

To be honest I didn't even know I was being taught, I just loved being in the kitchen with her and watching her turn simple ingredents into masterpieces!!

I was my Granny's first grand child and I was the only child for about 13 years, now that doesn't include my cousins which were a plenty but I think we had a certain connection from me being the first born!!!

From time to time I know I will have a Granny story or two mixed into my blogs!

Cooking is an art and I was trained by a Master!

Thank you Granny...A piece of you forever lives on in my heart and my food!!!

I LOVE YOU AND MISS YOU!!!

Today, I do my happy dance for the gift that was left brewing deep inside of me!!!

I came across this Swaggerty's Farm Premium Sausage brand while at the grocery store a year ago! Now, i was a skeptic for sure but I figured I would cross my fingers and give it a try for 6.99!

Well, I am so glad I did it was tasty and fresh it also was better than some of the name brands that charge almost 10 dollars for a 30 count box!

You can get this product here in Chicago I know for sure at Save-A-Lot and one more thing the price has gone up to 7.29 but you still save and they have not cut down on the quality of these delicious sausage!

When I cook mine I make sure the skillet or pan is hot before I add the sausage then when I hear that sizzle I add a little water to keep the sausage moist, when the water evaporates I turn my sausage over and repeat! I do this a couple of times until my sausage is my desired color!

Make sure when you cook pork especially that it is cooked all the way through otherwise you can get sick! I try to make sure I can get a little spring when I press down on the meat but my spatula shouldn't sink into the meat!

I always say when in doubt pull one of the sausages from the pan and cut to the middle if u don't see any pink it's done!

Well, I sure do hope you enjoy and that this starts your day off with a Happy Dance I know it always makes me smile!
I have always preferred fresh cut fries to frozen or a restaurant type fry until I came to Buffalo Joes on the North Side of Chicago!!!

Now the above picture is not from Buffalo Joes but one of my recreations and when you are cooking for a lot of people sometimes being able to create a great remake of your favorite place is always a good option!!!

I am always surprised and flattered when I hear people say you make some of the best homemade Fresh Cut Fries I have ever tasted!

Now, with my recreation I feel like I kicked it up a notch!!!

I always say depending on the size of the potato one per person is enough for one serving, especially if you don't want to go overboard on carbs but you just got to satisfy that hankering for carbs and salt!

Before I cut my potatoes I always clean them very well I actually use a veggie brush and clean off all the dirt from the surface.

After I clean the potato I take a sharp knife, my friends call it my sword because I have had this one knife since I was younger and just starting to feel my way through a kitchen.

You can also use a potato peeler but just make sure you don't skip the first step!

I think I'm going to have to take some pics and do some inserts but until then I hope I am explaining the process okay...smile

The quickest way to cut your potato is to have a potato slicer but if you don't you cut them lengthwise then cut them again to the size and/thickness you desire.

Make sure you have a bowl of cold water to place your potatoes in so that they don't turn brownish red from the air hitting them, I find that can change the taste and texture of my fries.

When you get down to your last two potatoes I would say depending on how fast you cut them, you can turn on the grease or oil!!!

Shortening(grease)still makes the best Fresh Cut Fries in my opinion but you can substitute with Canola, Vegetable or Corn oil!!

After, I finish cutting my last fry I stick it in the grease making sure that there is no water residue on the fry because water and hot grease doesn't mix.

If my fry begins to bubble then my grease is ready!!!

Here is a tip do not add to many fries to the pan make sure it is an even layer of fries if you are using a skillet! If you are using a Fryer or a pot you can add a few more fries.!

Once you get the amount of fries that you want in the grease turn your fire down because I find that when you allow the fries to cook a little slower but still with an aggressive heat the true flavor of the potato comes out and then you get a nice golden brown color that has a crunch on the outside and a flavorful inside!

Please be careful when removing your fries from the grease because they will be hot and sometimes that grease likes to talk back to you and it is never fun having a grease burn!

add some salt or pepper and serve right away...That is always the best!!!

Now if you want to add a kick to your fries here is what I think is some of the ingredients in one of my favorite fries from Buffalo Joes!!

Garlic Powder
Red Pepper
Paprika
Parsley Flakes
Salt
Pepper

I don't have a measurement of the ingredients because it is one of those things that preference comes into play maybe you like more Garlic Powder than Salt or Pepper than Red Pepper...start with a little at a time(tsp) and mix it in a bowl before you start cutting and cooking your Fresh Cut Fries or while they are cooking because this seasoning mixture taste better when you apply it on the Fries right out of the grease!!

Play around with it, Have fun and see how you can discover new ways to make your fries explode on your tongue with flavor!!!

Oh yeah I'm sure you and your friends will be doing your very own happy dance!!!

Here is the link to Buffalo Joes one of my favorite little spots and remember if you do go they only take cash!!!
This is me last year at Cafe Bella' celebrating my friends birthday! Now, I have always had an obsession with food, but not in a bad way! I always enjoy savoring each bite of my food; you know seeing if I can figure out the ingredients that the chef used so that I can try and recreate or remake a dish in my own way!

I am a foodie for life it is just this year really that I started taking food porn and adding it on yelp and facebook!!!

I figured why not dedicate a page where I could begin to log and journal the food I have experienced and the food that I love!

On my page I will share recipes, pictures, thoughts of restaurants I have visited and just have fun as I discover the world one bite at a time!!
